The original recipe included hummus, spinach, and feta for a quick meatless supper. The second time, I used a hoisin turkey and broccoli filling to stuff the sweet potatoes. Turkey Taco Stuffed Sweet Potatoes Ingredients

  • two large sweet potatoes
  • 1/9 cup olive oil
  • divided into 1 1/4 teaspoons of ground cumin, 1/4 teaspoon of salt, and 1/4 teaspoon of ground pepper.
  • Lean: 1/4 pound (93%) beef with turkey
  • 4 minced garlic cloves
  • one tablespoon of chili powder
  • 1/2 tsp. dried oregano
  • 1/2 tsp. paprika
  • Canned crushed tomatoes, 1 1/4 cups
  • 1/4 cup of pepper, grated Cheese, Jack
  • two teaspoons of flat-leaf parsley, minced

Instructions

  1. Using a fork, pierce the sweet potatoes all over. Cook in the microwave on HIGH until delicate when punctured with a fork, 4 to 5 minutes for every side. Wait until the potatoes are cool enough to handle.
  2. Divide the potatoes in half along their length. Place the potato flesh in a medium bowl after carefully scooping it out. The skins should be kept aside. Mash the potato flesh with the back of a fork until most of the lumps are gone. Mix in the olive oil, ½ teaspoon cumin, ¼ teaspoons salt and ¼ teaspoon pepper. The mashed sweet potato should be evenly distributed among the potato skins. Set it up on a baking sheet.
  3. In a large nonstick skillet, heat the oil to medium-high. Spray some cooking spray all over it. Cook, breaking up the ground turkey with a wooden spoon, until cooked through. Add the remaining 1/8 teaspoon salt and pepper, oregano, paprika, chili powder, and the remaining 1/4 teaspoon cumin. Cook for one second. Add the chopped tomatoes and stir.
  4. Set the broiler to high. The turkey mixture should be poured into each sweet potato skin. Grate one tablespoon of cheese on top of each. Broil for about 30 seconds or until the cheese is melted. Sprinkle parsley on top. Serve.
